Gaiwan Tea Brewing: Timing

I promised in my last post that I would write down how long I brew tea for in a Gaiwan.

I timed myself and found it very distracting to have to pay attention to a timer while brewing tea. I failed a couple of times when customers were coming in and out of the tea shop. It was very frustrating!

Then a tea friend came to visit and I asked him to time me while we drank some tea. I asked him not to let me see the timer.

We shared a pot of ShanLinXi and here is the result:

Gaiwan: 120ml

Amount of ShanLinXi I used that day: 7.7grams (I put the usual amount of dry leaves I put in the Gaiwan and then took the tea out to measure the weight. I don"t time my brewing and I don"t measure my tea either, I just eyeball it.)

Water Temperature: Boiling water. I heated it back up again for the forth infusion. I did a quick rinse(about 5 seconds).

1st infusion: 25 seconds (a good indication to pour out the first infusion is when the leaves are half open. Please see the picture below):
2nd infusion: 20 seconds
3rd infusion: 17 seconds
4th infusion: 20 seconds
5th infusion: 35 seconds
6th infusion: 55 seconds

I know some people don"t like to use as much tea as I do, so I did one timing with just a thin layer of dry leaves to cover the bottom of the Gaiwan. I took the leaves out and weighed it. It"s 5.8 grams. My friend secretly timed me again and here are the results:

1st infusion: 30 seconds
2nd infusion: 23 seconds
3rd infusion: 30 seconds
4th infusion: 30 seconds
5th infusion: 45 seconds

I have included the above experiments and times as a response to the many questions I get about brewing times; these are not meant as rules for anyone to have to follow. I"d bet that my timing changes a bit when I brew the same tea. This is for people who are new to Gongfu tea brewing to give them a frame of reference.

My suggestion is still the same. After you brew Gongfu tea for a while, stop using a timer or measuring the "exact amount" of tea. Start to pay attention to your tea rather than your timer. Trust me, you will build a good internal clock for your own tea brewing. Without the exact timing, the best cup of tea will show up when you least expect it. Without exact timing, you will reach a deeper understanding of the tea. Why limit yourself and your tea with a timer, be open and your tea will give you the best surprise ever. Happy tea brewing!

A good start

Days seem to go somber as I just sit and look at the outside world... I"m going down a very dark version of Memory Lane, remembering day after day of Doing Things Totally Wrong. Having to remind myself over and over of Ram Dass"s call to "be here, now."

And a new call to myself, to my own consciousness, something very specific that needs to change.

I need to become unattached to "not caring anymore." Yeah, I still need to unplug about caring about specific moments/people/actions of the past, which are past and gone, very much over and gone... but to specifically becoming unattached to Not Giving A Damn. Mostly about simply being alive.

Living in a morass of Not Caring is not good for me. Or anyone. It"s not like I need to become more attached to caring, it"s that I need to be unattached to Not Caring.

An interesting call. Perhaps being fully within Being Here Now will leave no room, no purpose, to Not Caring. The active dissatisfaction with simply being alive and somehow wanting that to be different so I wouldn"t be mired in the world of Not Caring. Which, believe me, is not a good place.

There"s nothing to be done about the myelin "wiring" problems that MS comes with, but malignant Not Caring... That I can change.

And why is that so hard?

Even knowing that, I don"t think would make a difference. Gotta change my consciousness, and that doesn"t come with an easy method.

What if I start with being Here, Now?

Is that not something I can do, MS or not?

Perhaps I should start doing that... being here, now.

Lunching at The Pandorica

Once upon a time, there was a lovely little tea room in Beacon, New York called "The Cup & Saucer Restaurant & Tea Room" (it"s still listed on Adagio Tea"s TeaMap as such). It offered lunch and afternoon tea and was very popular until the neighborhood changed. Owner Shirley Hot said that with the influx of hipsters to the area, her tea room wasn"t doing as well. She realized she had to re-invent her restaurant before "progress" took its toll. One day, after binge watching Doctor Who, she noticed that the bathroom door looked remarkably like the front of the TARDIS. Shirley said she knew nothing about hipsters but she, being British, knew about the Doctor and so two years ago, the Cup & Saucer morphed into the Pandorica.

Shirley"s gamble paid off, because Old School and New School Whovians have found their way to the Pandorica. The Traveling Teapot and I took advantage of a lovely sunny day and drove down to Beacon to visit the Pandorica. The restaurant offers lots of traditional British food--I had delicious Bangers & Mash for lunch--and much of it has a Whovian theme as you can see from the menu. Of course, if you"re going to have a Doctor Who lunch, you need to have a Doctor Who dessert and I just had to have Fish Fingers and Custard!

The Pandorica has two different kinds of Fish Fingers and Custard: the appetizer is really fish sticks and she really serves it with custard because patrons complained that the lemon aioli she originally serve them with wasn"t custard! The second type, seen here, is actually french toast fingers with custard and was very yummy.

While the Traveling Teapot just got to sightsee this time, I"m sure it felt at home with all the Whovian touches and Shirley says she has one, too. Naturally, I had to enjoy some tea with my "fish fingers." and tried the house Darjeeling which was very nice indeed.

The Pandorica tea list includes something for every taste including Rose Chocolate (black tea), Who Sencha (green tea) and Rooibos Colada. Shirley is starting to blend her own line of Whovian teas which will eventually be available online. When I told her about our group, she immediately went to Facebook and asked to join!

The Traveling Teapot will finally get to be the star of the show next week when I host my friends. She"ll be glad it"s just been vacationing so far!
